Tarragon - Orange Grilled Turkey

Turkey scallopini is lean, low in calories and quick to cook. If you can't find it the store, buy boneless, skinless chicken breasts and flatten them between waxed paper. Or buy a turkey breast, then cut the meat into thin slices and freeze the extra.




1lb Turkey OR chicken scallopini 500g




1/4 cup Orange Juice 50 mL




1 tsp Grated orange rind 5 mL




1 medium clove garlic, minced




1 tsp dried tarragon




Thin slices of orange 5 mL




Place turkey in shallow dish. Combine orange juice and rind, garlic and tarragon; pour over turkey and turn to coat both sides. Let stand for 5 minutes at room temperature or cover and refrigerate for up to 4 hours.




Spray grill with nonstick coating. Grill turkey over high heat or broil for about 2 minutes on each side or until no longer pink.




Garnish with orange slices
