Mocha Brownies

2/3 cup wheat flour (I use soy protein flour)


½ cup unsweetened cocoa powder


4 tsp instant coffee granules


½ tsp baking powder½ tsp salt


1/3 cup non-fat margarine, softened


½ cup granulated sugar


1 tsp vanilla extract


1/3 cup evaporated skim milk


2 egg whites




1. Preheat oven to 350. Spray an 8-inch square baking pan with non-stick cooking spray and set aside.


2. In a small bowl, combine all dry ingredients.


3. In a medium bowl, blend together the margarine and sugar until creamy. Beat in the egg whites, vanilla and evaporated skim milk. Gradually blend Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool on a rack.
