I think once you start making money for a year or two it'll be even harder to get back in the mindset of school, less of a social life, no money, etc. For me personally I'd get it all over with, do the school while you're still in the mindset of a student.
Chances are you'll be able to work right out of school and start earning money. True it will be less than in hygiene, but considering the amount of money you 'lost' while looking for a job I think nursing will still work out. It may be a pay cut on the paper, but you'll get full time work and benefits compared to maybe a few days of hygiene. You said jobs are scarce as it is, you won't have choices and with the way the economy is going I don't think it's going to change any time soon. Dentistry is becoming a luxury for many people, hospitals will always need staff.
I don't think it makes sense to stick with a career with a fairly dour outlook if you have the choice to do something else. Yeah the next couple of years will be rough, but if you can afford it I'd do it.
